INGREDIENTS

  • 2 cups soaked chickpeas
  • 1 bunch fresh coriander
  • 1 cup fresh spinach
  • 1/2 cup roasted chickpea flour
  • 1 tablespoon coriander powder
  • 1 medium onion, roughly sliced
  • 2 - 3 green chilies (adjust to taste)
  • 3 - 5 cloves of garlic
  • 1-inch piece of ginger
  • Salt, to taste
  • 1/2 teaspoon baking soda
  • Sesame seeds, for coating
  • Tata Simply Better Cold-pressed Sesame Oil, for deep frying

INSTRUCTIONS

  • In a food processor, combine the boiled chickpeas, fresh coriander, spinach, onion, green chilies, garlic, ginger, roasted chickpea flour, and coriander powder.
  • Pulse the mixture until it is coarsely ground. Be careful not to over-process; you want some texture in the batter.
  • Transfer the mixture to a large bowl.
  • Add salt and baking soda.
  • Mix everything together until well combined. If the batter feels too wet, you can add a little more chickpea flour to adjust the consistency.
  • Wet your hands slightly to prevent sticking, and take small portions of the batter to form balls or patties.
  • Coat the shaped falafel into sesame seeds, ensuring they are well coated on all sides.
  • Heat Tata Simply Better Cold-pressed Sesame Oil in a deep frying pan over medium-high heat. You need enough oil for the falafel to be fully submerged.
  • Once the oil is hot, carefully add the sesame-crusted falafel to the pan.
  • Fry for 3-4 minutes, or until golden brown and crispy. Be careful not to overcrowd the pan; fry in batches if necessary.
  • Remove the falafel with a slotted spoon and drain on paper towels to remove any excess oil.
  • Serve hot with your choice of dipping sauce or as part of a falafel wrap.
  • Enjoy your homemade sesame seed crusted falafel!
