Whip Up a Crunchy Delight. Try this Homemade Coconut Granola Recipe - Perfect for Breakfast or Snacking!

INGREDIENTS

  • 2 cups rolled oats
  • 1/2 cup almonds, roughly chopped
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup mixed seeds (such as sunflower seeds, pumpkin seeds, chia seeds, etc.)
  • 1/4 tsp salt
  • 1 tsp cinnamon powder
  • 1/4 cup coconut sugar
  • 1/4 cup honey
  • 1/4 cup Tata Simply Better Cold-pressed Coconut Oil
  • 1/2 cup dried cranberries
  • 1/4 cup goji berries
  • 1/4 cup dried anjeer (figs), chopped

INSTRUCTIONS

  • Preheat Oven: Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped almonds, walnuts, mixed seeds, salt, and cinnamon powder. Mix well.
  • Combine Sweeteners: Add the coconut sugar, honey, and Tata Simply Better Cold-pressed Coconut Oil to the dry mixture. Mix well until all ingredients are thoroughly combined.
  • Spread and Bake: Spread the mixture evenly on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, stirring halfway through to ensure even baking. The granola should be golden brown when done.
  • Cool and Add Fruits: Once baked, remove the granola from the oven and let it cool completely on the baking sheet. Once cooled, stir in the dried cranberries, goji berries, and chopped anjeer.
  • Store: Transfer the granola to an airtight container. Store in a cool, dry place. Enjoy your homemade coconut granola with milk, yoghurt, or as a snack on its own!
