Ingredients
- 2 cups rolled oats
- 1/2 cup almonds, roughly chopped
- 1/2 cup walnuts, roughly chopped
- 1/4 cup mixed seeds (such as sunflower seeds, pumpkin seeds, chia seeds, etc.)
- 1/4 tsp salt
- 1 tsp cinnamon powder
- 1/4 cup coconut sugar
- 1/4 cup honey
- 1/4 cup Tata Simply Better Cold-pressed Coconut Oil
- 1/2 cup dried cranberries
- 1/4 cup goji berries
- 1/4 cup dried anjeer (figs), chopped
Instructions
- Preheat Oven: Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped almonds, walnuts, mixed seeds, salt, and cinnamon powder. Mix well.
- Combine Sweeteners: Add the coconut sugar, honey, and Tata Simply Better Cold-pressed Coconut Oil to the dry mixture. Mix well until all ingredients are thoroughly combined.
- Spread and Bake: Spread the mixture evenly on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, stirring halfway through to ensure even baking. The granola should be golden brown when done.
- Cool and Add Fruits: Once baked, remove the granola from the oven and let it cool completely on the baking sheet. Once cooled, stir in the dried cranberries, goji berries, and chopped anjeer.
- Store: Transfer the granola to an airtight container. Store in a cool, dry place. Enjoy your homemade coconut granola with milk, yoghurt, or as a snack on its own!
