INGREDIENTS
- 1. 1/2 cup of Tata Cold-pressed Coconut oil
- 1 cup of granulated sugar
- 1 egg
- 1 teaspoon of vanilla extract
- 1 cup of all-purpose flour
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 cup of shredded coconut
- 1 tablespoon custard powder
INSTRUCTIONS
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the coconut oil, and brown sugar until it is light and fluffy.
- Beat in the egg, then stir in the vanilla extract.
- Now, in the same bowl, add the flour, baking soda, coconut, custard powder and salt.
- Stir in the shredded coconut.
- Shape the cookies and roll them in dried coconut. Place all cookies on a parchment-lined baking tray.
- Bake for 10-12 minutes in the preheated oven, or until it’s golden brown. Let cool on wire racks.
