INGREDIENTS

  • 500 gm brinjals (eggplants)
  • 2 tablespoons Tata Simply Better Cold-pressed Groundnut Oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon urad dal
  • 1/4th tsp hing
  • Kari patta
  • 1 large onion sliced
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves (for garnishing)

For spice mix:

  • 1/4th cup peanuts
  • 1 teaspoon sesame seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 2-3 dry red chillies
  • 6-7 cloves of garlic

INSTRUCTIONS

  • 1. Dry roast all the ingredients for the spice mix on medium flame. Grind and make a coarse powder of the spice mix and set aside.
  • Wash and cut the brinjals into slices.
  • In a pan, heat oil over medium heat. Add mustard seeds and cumin seeds, urad dal, hing, and Kari patta. Once they splutter, add the onions and sauté for a few minutes.
  • Add in haldi powder, red chilli powder, garam masala, and salt.
  • Add the brinjal slices, stir the brinjals and cook for a few minutes until they start to soften.
  • Cover the pan and let the brinjals cook on low-medium heat. Stir occasionally to prevent sticking.
  • Once the brinjals are fully cooked and tender, sprinkle the prepared spice mix and give it a final mix.
  • Cook for another minute or so to allow the flavours to meld.
  • Garnish with fresh coriander leaves.
  • Serve the brinjal fry as a side dish with rice or roti.
