Bengali Shukto
Traditional Bengali Shukto - Perfect for a Homely Meal Made with Tata Simply Better Cold-pressed Mustard Oil!

Ingredients
- Bitter gourd (Karela) - 1 small
- Bengali badi - 8-9 pieces
- Potato - 1 medium
- Brinjal (Eggplant) - 1 small
- Raw banana (Plantain) - 1
- Drumsticks - 1 or 2
- Beans - 100 grams
- Panch poran (Bengali five-spice mix) - 1 tsp
- Bay leaves - 2
- Dried red chilli - 2-3
- Ginger paste - 1 tbsp
- Milk - ½ cup
- Tata Simply Better Cold-pressed Mustard Oil - as required
- Salt and sugar - to taste
- Ground spices: Cumin and mustard seeds - 1 tsp each
- Haldi - 1 teaspoon
- Paste of poppy seeds
Instructions
Preparation:
Clean and cut all the vegetables into long strips.
Cooking Vegetables:
- Heat Tata Simply Better Cold-pressed Mustard Oil in a pan.
- Fry the Bengali badi, bitter gourd, brinjal, potato, and raw banana separately; keep aside.
- In the same oil, add panch phoron, bay leaves, and dried red chilli. Fry for a few seconds.
- Add all the other vegetables, including carrots and beans.
- Cook briefly and add the rest of the prepared vegetables.
- Stir and cover to cook on low heat.
- Add ginger paste, poppy seed paste. Sprinkle water if needed.
- Add salt, haldi powder, and sugar to taste.
Finishing:
Add milk and simmer for a few minutes until the vegetables are cooked but not mushy.
Serving:
Serve hot with rice.
Shukto is usually enjoyed as a first course in a traditional Bengali meal.
